Can red/burgundy table wine that is rancid be safely used as a cooking ingredient?
Absolutely not. The rule of thumb when cooking with wine is to not cook with anything you wouldn't drink on its own. That does not mean that you cannot use "Two Buck Chuck" or a less expensive wine for cooking, but under no circumstances can you use rancid wine in a dish and expect it to turn out fine. Rancid, spoiled or "corked" wine will ruin your dish not to mention your appetite! Would you cook with rancid oil simply because you have it on hand? No! The cooking process, while able to integrate the flavors of wine into your food, cannot turn a rancid bottle back to good again.
